Now that I am older and wiser and seeing that my family have corn meal porridge almost every Sunday morning I realized how I can cook porridge without the hassles and fear of getting burn.
Growing up in Jamaica there are certain things that as we grow we should be able to accomplish .School work is a must no if and /or but where that is concern.
In addition to school work we have to learn how to wash (not with washing machine) iron, clean and cook by age 10 or so. Everything have to be done properly especially when it come to the cooking. Member say s no dutty pot a real cooking.
My toughest task was to cook cornmeal porridge and fry egg because I was so afraid of getting burn by the plopping of the porridge as it cook or the oil as it pop from the egg frying.
I also hated mixing the corn meal mixture in the boiling pot of water because u have to mix quickly to prevent lumpy porridge and to avoid getting burn.
I put my water to boil, add cinnamon then I mixed my corn meal, cinnamon, nutmeg, and salt together before mixing tap water to make a paste consistency then I add some of the boiling water to the mixture while I stir. Then I pour the mixture into the boiling water and stir. No lump should be present it the porridge is made this way. Lower the heat and cook for 10 minutes then add spice, sugar, and milk to taste…Enjoy.
